Omelette
How better to start a cyclist’s day? Three eggs, Parmesan, salt, a slice of ham and… my secret ingredient. That’s it — breakfast is served.
Paccheri ai Frutti di Mare
This is where cooking becomes pure fun and relaxation for me. Fresh seafood, juicy prawns, cherry tomatoes and fragrant basil, finished with a splash of good white wine. The smell alone is enough to get me excited about cooking.
Risotto ai Funghi
A true Italian classic, and a dish I perfected during my first job after culinary school. Carnaroli rice, porcini mushrooms, garlic and parsley, slowly cooked and finished with fresh butter and Parmesan. Simple ingredients, done properly.
Lasagne
Nothing takes me back to Sunday at my grandmother’s house quite like lasagne. It starts the day before, with a slow-cooked ragù Bolognese, followed by béchamel, fresh pasta and plenty of Parmesan. Then comes the hardest part: 20 very long minutes in the oven while the smell fills the house.
Tiramisù
Who doesn’t love Tiramisù? And cyclists with a sweet tooth are especially dangerous around it.
I follow the traditional Venetian recipe: Savoiardi biscuits soaked in coffee and Amaretto, layered with rich mascarpone cream and finished with a generous dusting of cocoa.
